Food Friday: Chicken Inasal

Chicken Inasal is one of my family's favorite. I got this very easy recipe of yummy grilled chicken from Food Magazine. I tried it and the kids loved it, they keep asking for more.

Ingredients:

  • 1/2 cup vinegar
  • 1/4 cup sugar
  • 1/4 calamansi or lemon
  • 1/4 cup soy sauce
  • 2 tbsp crushed garlic
  • 1/2 tbsp salt
  • 1 whole chicken (quartered)
  • olive oil
  • achuete [annatto]
Procedure:

1. Make the marinade by combining vinegar, sugar, calamansi, soy sauce, garlic and salt. Marinate Chicken parts for 3 hours.

2. Grill marinated chicken over charcoal.

3. Baste chicken with olive oil boiled with achuete, taking care not to burn the chicken.

We love grilled chicken. I do not know if I have the patience to cook that over charcoal so we just get ours from the supermarket. The leftovers are then made into adobo :D
