Leftover Tips

After a party or a big holiday meal, try to get leftovers into the refrigerator within two hours. Harmful bacteria grow quickly at room temperature. Try keeping foods in shallow containers to allow them to cool quickly. Foods containing milk and eggs spoil more quickly, as much as possible, don't let desserts and cakes sit on top of the counter for a long time.
If you have not eaten leftovers within three days, it will be wise to throw them out. If you freeze them, it's alright because they can last for a few months. Heat leftovers to steaming, or at least 165 degrees Farenheit. For gravy, bring to a boil before serving.

Same here, I freeze the left overs. Good thing there's a microwave but still advisable to heat it at boiling point.
Great advice! We try to eat left overs within the next day. I don't like throwing out food...makes me feel guilty somehow!
