Shrimps with Salted Egg Yolk Sauce

It's been a while since I posted a recipe here and I'm sure some of you are missing my easy to prepare food recipes already. There's been a craze about anything salted egg lately and one of my faves aside from the potato chips is the Salted Egg Shrimps.

I have tried a few version of the recipe that I found online and this is just one of them. It's really good and not as rich, so if you are looking for a lighter version of this dish, this is it.


Ingredients:

  • 1 pound large shrimps
  • 2 tablespoons butter
  • 1 tablespoon light soy sauce (for color)
  • 1 tablespoon oil
  • 3 shallots, peeled and finely chopped
  • 2 cloves garlic, peeled and minced
  • 2 chili peppers, stemmed and minced
  • 1 cup evaporated milk
  • 6 salted egg yolks, mashed
  • ½ teaspoon sugar
  • salt to taste

Directions:


  1. Trim tendrils of shrimps and wash under cold water. Make sure you drain them well using a colander. You don't want a runny sauce.
  2. In a wide pan over medium heat, heat butter and oil. When butter begins to melt, Add shallots, garlic and chili peppers. Cook, stirring regularly, for about 1 minute or until limp and aromatic.
  3. Reduce heat, soy sauce, evaporated milk and bring to a simmer (Don't boil). Add salted egg yolks and continue to cook, mashing the yolks with back of spoon, for about 1 minute or until slightly thickened. Add sugar and season with salt to taste.
  4. Add shrimps and cook, stirring occasionally, until shrimps changes color to pink and sauce thickens. Remove from heat and serve hot.
  5. Best served with steamed or garlic fried rice.
