The savory scents wafting from your kitchen as you crisp bacon for breakfast would surely wake up the whole family. Homemade bacon is so easy to make and gives you better control on the amount and type of preservatives that go into it. I found this very easy to prepare recipe from Food Magazine. I've tried it and my family loves it.
Ingredients:
1 kilo pork belly
2 tbsps refined sugar
1 tbsp refined salt
1 tbsp bacon powder
1 tbsp isolate
1 tsp carageenan
1 tsp phosphate
1/2 tsp curing salt
1/2 tsp MSG
1/2 tsp beef aroma
1/2 tsp meaty ginisa or meaty seasoning
1/4 tsp Vitamin C powder
1/4 tsp meat enhancer
1/4 tsp smoke flavor
1/2 cup chilled water
2 tbsp honey
Procedure:
1. Lay the meat strips flat in a suitable stainless, glass, or white plastic container. If you use plastic, make sure that it's not made of recycled plastic and that it's of food grade quality.
2. Prepare the curing ingredients.
3. Mix curing ingredients except honey.
4. Strain mixture through a wire sieve then stir in honey.
5. Pour half of the mixture on the surface of the sliced meat and massage very well for 2 minutes by repeatedly pressing and rubbing a rubber spatula over the meat surface.
6. Turn the meat over and repeat Step 5 on this side of the meat slices. Cover the meat and let cure in the middle portion of the refrigerator to develop color, aroma, and flavor, for 8 hours.
After curing, the bacon is ready to cook. Fry the bacon in a very small amount of fat, or if you are using a non-stick pan, you can eliminate the oil. Fry until golden brown.
