If you're out of lemon and you need to keep sliced bananas, apples and pears from browning try honey. It can help prevent oxidation the same way citrus juice can. Coat the fruit slices with a tablespoon of honey. I suggest you use light honey, it is milder in flavor and it won't compete with fruit.
